Strawberries are just at the end of their season, so I have to write this recipe down before it feels irrelevant! A Middle Eastern take on “Strawberries and Cream”, here the “Cream” part is replaced with wonderful multi-purpose Tahini (I always keep a jar in my kitchen) and then elevated with fruity tangy Sumac and the sweet richness of honey.

INGREDIENTS:
Strawberries
Tahini
Water
Sumac
Honey (or Maple Syrup if you would prefer)
DIRECTIONS:
Wash your strawberries and slice them in half and set them aside.
In a bowl, place about 2 TBSP of tahini. Then gradually, add water. The water will thin the Tahini out while you whisk it with a fork or a small whisk. You can also do this in a blender or nutribullet- but the latter better for large amounts. It’s very important that you add the water gradually as the texture of the Tahini changes quicker than you realize. You want an end result that is not too thick (too cloying for this recipe) and not too watery either.
Place your strawberries in a pretty bowl.
Drizzle the whisked Tahini all over , sprinkle with a lots of Sumac and finish with drizzle of Honey!
