Not all zaatars tastes the same.

Across Syria, Lebanon, Palestine and Jordan, every family has its own way of making it. Ratios change, herbs differ, spices come and go, and recipes are rarely written down—they are remembered through taste, repetition and shared meals.

This blend is inspired by my mother’s recipe from Syria. While rebuilding it together during her journey with dementia, I came to realise that recipes are more than instructions. They are living archives of memory, identity and home.

Made with fragrant thyme, roasted sesame seeds, tangy sumac, nigella seeds and a subtle touch of toasted coconut, this zataar is deeply aromatic, gently earthy and wonderfully balanced.

Enjoy it the traditional way with good olive oil and warm bread, or sprinkle it over roasted vegetables, avocado toast, hummus, labneh, salads, potatoes or popcorn.
