
The other day, I had some bananas that were getting nice and ripe, sitting on my kitchen counter. And as lately, I’ve been obsessed with making healthy, wholesome desserts, I took a good look at them, and like I do with most ingredients: I like to talk to them 🙂
This time, I told the bananas that I was going to turn them into brownies. Because why not.
I already had a sweet potato brownie recipe as a point of reference, but I wanted to see what bananas could do.
I’m extremely pleased with the result, and actually prefer this approach over the sweet potato one!
You will taste a bit of banana flavor, but it doesn’t clash in the wrong way.

BANANA BROWNIES (VEGAN, GLUTEN-FREE)
INGREDIENTS
For a 9 x 13” / 23 x 33cm baking pan
480gr ripe banana, without peel
300gr ground almonds
Pinch of salt
2 tsp cinnamon
120gr unsweetened cacao
150gr maple syrup
DIRECTIONS
1.Preheat your oven to 180°C (350°F) and line your baking tray with parchment paper.
2.In a mixing bowl, mash the bananas until smooth.
3.Add the ground almonds, salt, cinnamon, cacao powder, and maple syrup to the bowl.
4.Mix everything well until combined, then pour the batter into the prepared baking tray and spread evenly.
5.Bake for 25 minutes, or until the brownies are set.
6.Remove from the oven and allow to cool completely before slicing.
Optional: Top with chopped dark chocolate, seeds, nuts, or your favorite toppings.
Store in an airtight container.
