PISTACHIO HONEY OAT CRISPIES

Makes 8 crispies

INGREDIENTS

100gr oats, preferably organic
50gr pistachios, unsalted
1 tsp cinnamon
40gr tahini
60gr honey, ethically sourced
Pinch of salt

DIRECTIONS


1.Preheat your oven to 350°F (180°C) and line a baking tray with parchment paper.
2.In a bowl, mix the oats, pistachios, cinnamon, and a pinch of salt.
3.Add the tahini (ensure it’s well-stirred first) and honey. Mix thoroughly until the ingredients stick together and form a cohesive mixture.
4.Using a spoon and clean fingers, shape the mixture into small cookies and place them evenly on the lined baking tray.
5.Bake for 15 minutes until lightly golden.
6.Allow the cookies to cool completely on the tray — they will crisp up as they cool.
Store in an airtight container to maintain freshness.
