I love this recipe because it’s so accessible- in ingredients and technique. I also love that it can be a base recipe for toddler cookies- who often (to my understanding), work well with mild flavors.

All you need is a ripe banana and grated coconut!

And drizzle on some melted dark chocolate as an option!

INGREDIENTS

Makes 8 macaroons

160gr ripe banana, mashed (about 1 medium banana)
120gr, unsweetened grated coconut

DIRECTIONS

1.Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
2.In a bowl, combine the mashed banana and grated coconut. Mix well until you achieve a cohesive paste, ensuring all the coconut is fully incorporated.
3.Using your hands, form small snowball-like shapes, lightly flatten them, and place them on the prepared baking tray.
4.Bake for 16 minutes, or until lightly golden. Remove from the oven and allow the macaroons to cool completely.
5.Enjoy them as is, or drizzle with melted dark chocolate for an extra treat!
Storage Tip:
Store in an airtight container in the fridge to keep them fresh.
