
This year, I wanted to make a healthy version of my favorite holiday cookie: the Basler Brunsli. I was first introduced to this delicious specialty when I lived in Switzerland, the original version is made from chocolate (melted or ground), almond flour, egg whites, sugar, delicious warm spices and kirsch.
I was determined to make a nourishing version (which also turns out to be gluten free) with wholesome ingredients and nothing too cloyingly sweet. You’ll need a scale for this recipe, hope you give it a try!
HEALTHY BASLER BRUNSLI (VEGAN + GF)
Makes 10 hearts
INGREDIENTS
100g unsalted almonds
20g unsweetened cacao powder
2 teaspoons ground cinnamon
1/2 teaspoon ground cloves (optional)
60g coconut sugar
200g unsweetened applesauce
DIRECTIONS
1. In a completely dry blender or food processor, blend the almonds until they form a medium-fine powder.
2.In a mixing bowl, combine the ground almonds, cacao powder, cinnamon, and coconut sugar.
3.Add the applesauce and mix well until you have a uniform cookie dough.
4.Place the dough in the fridge for at least 2 hours, or even better, overnight.
5.When ready, take a portion of the dough, flatten it out, and cut into shapes using a cookie cutter of your choice.
6.Bake on a lined baking tray at 180°C (350°F) for 20 minutes.
7.Allow the cookies to cool completely before touching them. They will be soft when they first come out, but cooling helps them set properly.
Store in an airtight container.
