PUMPKIN PEANUT SOUP

You may find the combination of pumpkin and peanut strange, but it works- trust me. Give it a try, it’s filling, rich and velvety and good for the soul!

INGREDIENTS

4 large wedges of pumpkin, peeled and diced into large cubes.

2 onions, chopped

3-4 TBSP peanut butter

Salt

Garlic

Garam Masala

Cilantro to garnish (optional)

Oil to cook

DIRECTIONS

In a pot, place your onions and a bit of oil. Cook for a few minutes until translucent.

Throw the pumpkin in the pot too. Let them cook and develop flavour for a few short minutes.

Add some water (but not too much), just enough to cook and soften the pumpkins.

When the pumpkins are soft and cooked, turn off the heat and transfer to a blender.

To the blender, add the peanut butter, garlic and spices, blend until smooth.

Taste and adjust spices to your desire.
Pour in soup cups or bowls and garnish with fresh herbs.
*You can also add cooked lentils to this soup if you want extra protein!
