It’s hot and here’s a lush way to use refreshing watermelon. It’s a poetic dreamy fruity concoction: watermelon, lychees, rose water, mint and pistachios. The recipe is self explanatory!

INGREDIENTS
Watermelon, diced
Lychee, cut in half (fresh or canned)
Rose water
Pistachio, chopped
Fresh black mint leaves
DIRECTIONS
In a bowl, add a half/half ratio of watermelon/lychee and a bit of fresh mint. Then drizzle over just a bit of rose water- not too much so it’s not overpowering.
Give it a gentle mix, let it sit for about 10 minutes so the flavours can marry and merge then place on a presentation plate.
Garnish with the chopped pistachios. Enjoy!
