This recipe jazzes up your regular broccoli roast with a blend of “curry” spices (which work really, really well with broc!) finished with nutty shaved coconut and mixed dried fruits. It all works really, really well together!

INGREDIENTS:
Broccoli florets
“Curry” spices (either pre-mixed or you can use a combination of spices such as turmeric, chili pepper, ginger, fenugreek, cumin, coriander, etc)
Salt
Garlic powder
Oil
Shaved coconut
Your choice of dried fruits
DIRECTIONS
Preheat your oven to 230F/450F.
Slice your broccoli florets- the more surface contact they will have on your baking tray, the more roast, the more flavour!
Season your broccoli florets with the curry spices, salt, garlic powder and oil. Make sure you get those flavours in every corner!
Roast the broccoli for 15 minutes.
Transfer the roasted broccoli florets to a large mixing bowl and finish them off with coconut shavings and the dried fruits. Toss everything together gently.
